Whether or not you would technically consider this a \u201c<a href=\"http:\/\/yoganonymous.com\/recipe-winter-pear-pistachio-salad\">salad<\/a>\u201d is up to you\u2014it\u2019s a bit more hearty than your average chopped kale. It&#8217;s always nice to have an arsenal of seasonal side dishes that are strong enough to stand on their own, and you can always add a protein to make it more of a meal. Combining goat cheese, pine nuts, and avocado, this recipe fits the bill. Bonus point? All those colors make for a\u00a0<em>really<\/em>\u00a0rad presentation.<\/p>\n<p>Popeye aside, we all know that spinach is healthy. It contains Vitamins K, A, magnesium, folate, and iron in massive quantities. Strawberries are an excellent source of Vitamin C and manganese. You will get a nice dose of heart-healthy fats from the olive oil and <a href=\"http:\/\/yoganonymous.com\/recipe-spinach-avocado-pesto-gluten-free\">avocado<\/a> in this dish, plus a little protein boost from the pine nuts. Your taste buds and your body will thank you. Enjoy!<\/p>\n<h3>Warm Spinach and Strawberry Salad<\/h3>\n<p><em>Serves 2<\/em><\/p>\n<p>INGREDIENTS<br \/>\n4 cups of baby spinach<br \/>\n4 cloves of garlic, minced<br \/>\n4-6 strawberries, sliced<br \/>\n1 avocado, peeled and sliced or chopped<br \/>\n1 tsp lemon juice<br \/>\n2 tsp balsamic vinegar<br \/>\n2 tbsp olive oil<br \/>\n2 tbsp crumbled goat cheese, optional<br \/>\n1 tbsp toasted pine nuts<br \/>\nSalt and pepper to taste<\/p>\n<p><strong>INSTRUCTIONS<\/strong><\/p>\n<p>Heat olive oil in a medium pan over low heat.
