Get ready to enjoy this fiesta for your taste buds after your Wellest Challenge classes!<\/p>\n<h3>Ingredients<\/h3>\n<p>1\/4 cup pre-cooked canned chickpeas, drained and rinsed<br \/>\n1\/2 cup walnuts<br \/>\n2 tablespoons extra-virgin olive oil<br \/>\n1 teaspoon flaxseed meal<br \/>\n1\/2 teaspoon ground cumin<br \/>\n1\/2 teaspoon ground coriander<br \/>\n1\/2 teaspoon paprika<br \/>\n1\/2 teaspoon chili powder<br \/>\n1\/2 teaspoon garlic powder<br \/>\n1\/2 teaspoon onion powder<br \/>\nSalt and fresh ground black pepper to taste<br \/>\n1\/2 tomato, chopped<br \/>\n1\/2 white onion, diced<br \/>\n1\/4 cup chopped cilantro<br \/>\n1 jalapeno, chopped and divided<br \/>\n4 romaine lettuce leaves, chopped<br \/>\n1\/2 cup pre-cooked canned black beans, drained and rinsed<br \/>\n1 avocado, sliced<\/p>\n<p><em>To make salad:<\/em><\/p>\n<ol>\n<li>In a food processor or VitaMix combine the chickpeas, walnuts, olive oil, flaxseed meal, cumin, coriander, paprika, chili powder, garlic powder, and onion powder. Season with salt and pepper, and pulse until the mixture has the consistency of chopped &#8220;meat&#8221;. Set aside.<\/li>\n<li>In a bowl, combine the tomatoes, onion, cilantro, and a teaspoon of jalapeno and toss together.<\/li>\n<li>Place chopped romaine lettuce into bowl.<\/li>\n<li>Add 2 spoonfuls of black beans, tomato mixture, a spoonful of the chopped &#8220;meat&#8221; and sliced avocado.<\/li>\n<\/ol>\n<h3>Chili-Lime Ranch Dressing<\/h3>\n<p>1\/3 cup vegan unsweetened plain yogurt (add a squeeze of lemon to taste)<br \/>\nJuice from 1\/4 lime<br \/>\nPinch of onion powder<br \/>\nPinch of parsley<br \/>\nPinch of garlic powder<br \/>\nPinch of chili powder<br \/>\n1\/2 teaspoon plain unsweetened almond milk<\/p>\n<p>In a bowl, mix together, drizzle over salad.<\/p>\n<h3 style=\"text-align: center;\"><a href=\"https:\/\/wanderlust.com\/challenges\/10-day-wellest-challenge\/\" target=\"_blank\" rel=\"noopener\">Learn from Andrew in the 10-Day Wellest Challenge<\/a>!<\/h3>\n<p>\u2014<\/p>\n<p><em><img loading=\"lazy\" decoding=\"async\" class=\"alignleft wp-image-128224\" src=\"https:\/\/wanderlust.com\/wp-content\/uploads\/2019\/07\/Screen-Shot-2019-07-15-at-12.56.23-PM.png\" sizes=\"auto, (max-width: 208px) 100vw, 208px\" srcset=\"https:\/\/wanderlust.com\/wp-content\/uploads\/2019\/07\/Screen-Shot-2019-07-15-at-12.56.23-PM.png 602w, https:\/\/wanderlust.com\/wp-content\/uploads\/2019\/07\/Screen-Shot-2019-07-15-at-12.56.23-PM-229x300.png 229w\" alt=\"andrew bio photo\" width=\"208\" height=\"272\" \/>Andrew Sealy is a connection catalyst, a yoga artist, and a movement creator.
