And what better way to celebrate spring than with fresh veggies from your local farmers market?<\/p>\n<p>This recipe combines some of the best spring produce, all topped with a homemade lemon and a dill and yogurt-based dressing. Find more recipes from the\u00a0<a href=\"https:\/\/tv.wanderlust.com\/catalog\/from-the-wanderlust-kitchen\" target=\"_blank\">Wanderlust Kitchen<\/a> on <a href=\"https:\/\/tv.wanderlust.com\/\" target=\"_blank\">Wanderlust TV<\/a>.<\/em><\/p>\n<h3><b>Roasted Portobello and Mixed Green Salad with Radishes and Yogurt-Dill Dressing<\/b><\/h3>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<p><strong>Salad<br \/>\n<\/strong><span style=\"font-weight: 400;\">1 tbsp extra virgin olive oil<br \/>\n<\/span><span style=\"font-weight: 400;\">2 portobello mushroom caps<br \/>\n<\/span><span style=\"font-weight: 400;\">1 tbsp balsamic vinegar<br \/>\n<\/span><span style=\"font-weight: 400;\">Pinch of sea salt<br \/>\n<\/span><span style=\"font-weight: 400;\">Pinch of pepper<br \/>\n<\/span><span style=\"font-weight: 400;\">3 handfuls arugula or other salad greens, washed and dried<br \/>\n<\/span><span style=\"font-weight: 400;\">2 watermelon radishes, thinly sliced<br \/>\n<\/span><span style=\"font-weight: 400;\">1 avocado, sliced in half, skin removed, cut into slices<\/span><\/p>\n<p><strong>Dressing<br \/>\n<\/strong>1\/2 cup plain plain yogurt (siggi\u2019s plain yogurt recommended)<br \/>\n1 small clove garlic, minced<br \/>\n<span style=\"font-weight: 400;\">1 teaspoon lemon zest<br \/>\n<\/span><span style=\"font-weight: 400;\">Juice of 1 lemon<br \/>\n<\/span><span style=\"font-weight: 400;\">2 tsp fresh dill, chopped<br \/>\n<\/span><span style=\"font-weight: 400;\">Salt to taste<br \/>\n<\/span><span style=\"font-weight: 400;\">Pepper to taste<br \/>\n<\/span><span style=\"font-weight: 400;\">2 tbsp\u00a0extra virgin olive oil <\/span><\/p>\n<p><strong>DIRECTIONS<\/strong><\/p>\n<p><span style=\"font-weight: 400;\">Preheat the oven to 400 degrees. Line a baking sheet with parchment paper. Brush the olive oil and balsamic vinegar onto the mushrooms. Sprinkle with salt and pepper. Lay the mushrooms on the baking sheet, gills down. Bake for 15 minutes.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">While the mushrooms are baking, prepare the low-sugar yogurt-dill dressing. Combine s<\/span><span style=\"font-weight: 400;\">iggi\u2019s plain yogurt<\/span><span style=\"font-weight: 400;\">, garlic, lemon zest, lemon juice, dill,\u00a0salt, and pepper in a small bowl. Add the olive oil and whisk it until smooth. If it\u2019s too thick, add a little more lemon juice and\/or olive oil until you have reached the desired consistency.\u00a0<\/span><\/p>\n<p>Add the greens together to a bowl and top with radishes and dressing. Toss to coat. Remove the portobellos from the oven and place them on top of the salad.
