Who doesn’t love avocado toast? It’s everywhere these days. For breakfast, lunch, dinner, or a midnight snack, it’s the one dish that everyone loves to love (and Instagram<\/a>).<\/p>\n

But here’s the thing: We’re not sick of it yet. Not even close. Especially when it’s Wanderlust Hollywood<\/a> executive chef Seamus Mullen’s version. “It’s lightly mashed avocado, some chile, some cilantro, some lime, an egg\u2014a perfect light starter or a great breakfast.” We’d call it perfect, too.\u00a0<\/span><\/p>\n

INGREDIENTS<\/strong><\/p>\n

1 slice toasted Sourdough rubbed in\u00a0extra virgin olive oil
\n1\/2 avocado, diced
\n3 sungold tomatoes, quartered
\nSerrano chilies, 8 thin slices
\nLime juice
\nExtra virgin olive oil
\nSalt and Pepper
\nRadish, 5 slices
\n1 whole egg *
\nDill
\nCilantro
\nEspelette
\nMaldon Salt<\/p>\n

*skip the egg to make this recipe vegan\u00a0<\/em><\/p>\n

DIRECTIONS<\/strong><\/p>\n

In a small mixing bowl combine avocado, tomato, lime juice, extra virgin olive oil. Season with salt and pepper.<\/p>\n

Boil the egg for 7 minutes. Slice in quarters.<\/p>\n

Toast bread, avocado mix, chiles, radishes, finish with egg, drizzle with olive oil\u00a0and garnish with herbs.<\/p>\n

Makes 1 serving\u00a0<\/em><\/p>\n
