Up this week: this Tropical Paradise Quesadilla, a unique twist on the classic recipe combining pepper jack cheese, black beans, and pineapple to create a playground of bright and healthy flavors. Combine with <a href=\"https:\/\/wanderlust.com\/journal\/mindful-indulgence-baked-queso-dip\/\" target=\"_blank\">Baked Queso<\/a> for a mindful, Mexican feast, or sub dairy-free cheese for a vegan option.<br \/>\n<iframe loading=\"lazy\" style=\"border: none;\" src=\"\/\/uscreen.io\/embeds\/67418?checksum=1490025155\" width=\"630\" height=\"360\" allowfullscreen=\"allowfullscreen\"><\/iframe><\/p>\n<h3>Recipe: Tropical Paradise Quesadilla<\/h3>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<p><span style=\"font-weight: 400;\">1 small organic red onion, thinly sliced<br \/>\n<\/span><span style=\"font-weight: 400;\">2 cups organic red wine vinegar<br \/>\n<\/span><span style=\"font-weight: 400;\">1\/3 cups water<br \/>\n<\/span><span style=\"font-weight: 400;\">1\/2 cup organic honey<br \/>\n<\/span><span style=\"font-weight: 400;\">1 tsp salt<br \/>\n<\/span><span style=\"font-weight: 400;\">2 bay leaves<br \/>\n<\/span><span style=\"font-weight: 400;\">1 tbsp organic olive oil<br \/>\n<\/span><span style=\"font-weight: 400;\">2 organic flour tortillas<br \/>\n<\/span><span style=\"font-weight: 400;\">1\/2\u00a0cup organic pepper jack cheese<br \/>\n<\/span><span style=\"font-weight: 400;\">2 tbsp organic black beans<br \/>\n<\/span><span style=\"font-weight: 400;\">2 tbsp chopped pineapple<\/span><\/p>\n<p><strong>DIRECTIONS<\/strong><\/p>\n<p><span style=\"font-weight: 400;\">Add red wine vinegar, water, honey, salt and bay leaves to a pot and bring to a bowl. Once the brine is boiling, add the onions, stir, and turn the heat off. Remove and let sit for at least 15 minutes. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Add olive oil to a cast iron pan and turn the heat to medium. Add one tortilla and top with half of the cheese, black beans, 2 tbsp of the pickled red onions from step one, and the remaining cheese. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Add the top tortilla and cook until the bottom layer of cheese has started to melt and the bottom tortilla is crisp and golden. Carefully flip the quesadilla and repeat until the other side is crispy and all the cheese has melted.
