This is one of my favorite dishes to make\u2014it&rsquo;s a porridge of oats, millet, beets, and I finish it with a fried egg. Dark greens, healthy grains, some good fat, and you&rsquo;re good to go.\u00a0<\/span><\/p>\n<p class=\"p1\"><strong><span class=\"s1\">INGREDIENTS<\/span><\/strong><\/p>\n<p class=\"p1\"><span class=\"s1\">1 cup organic oats<br \/>\n<\/span><span class=\"s1\">\u00bd cup organic millet<br \/>\n<\/span><span class=\"s1\">3 cups vegetable stock<br \/>\n<\/span><span class=\"s1\">1 beet with greens (beet diced, greens roughly chopped)<br \/>\n<\/span><span class=\"s1\">1 shallot, diced<br \/>\n<\/span><span class=\"s1\">2 tbsp beet powder (optional)<br \/>\n<\/span><span class=\"s1\">1 tbsp apple cider vinegar<br \/>\n<\/span><span class=\"s1\">Salt and pepper to taste<br \/>\n<\/span><span class=\"s1\">Eggs<br \/>\n<\/span><span class=\"s1\">Basil<br \/>\n<\/span><span class=\"s1\">Olive oil<\/span><\/p>\n<p class=\"p1\"><strong>DIRECTIONS<\/strong><\/p>\n<p class=\"p1\"><span class=\"s1\">Saut\u00e9 the shallot and diced beet in 2 tbsp of olive oil for 2-3 minutes. Add the grains and toast for 30 seconds. Deglaze with cider vinegar then add the vegetable stock and bring to a boil. Reduce to a simmer, cover and cook for 15-20 minutes until all liquid is absorbed. Fold in the beet greens and beet powder. Season with salt and pepper.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Heat 1 tbsp of olive oil in a small saut\u00e9 pan over medium-high heat and fry two eggs to your liking. <\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Serve a generous portion of porridge with a fried egg and garnish with torn or chopped basil leaves.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\"><strong>Option:<\/strong> To prepare in a rice cooker, combine all ingredients except beet greens and beet powder. Set to \u201cporridge setting\u201d and cook. Once the porridge is fully cooked, fold in the beet greens and beet powder, and serve with eggs.<\/span><\/p>\n<p class=\"p1\" style=\"text-align: center;\">\u2022\u2022\u2022<\/p>\n<p
