These days salads tend to pack a nutritional punch, often with enough protein and whole grains for a post-yoga meal. And rising in popularity as a salad grain is farro, which <\/span><span style=\"font-weight: 400;\">has\u00a0been a staple of Italian dining for hundreds of years.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">But farro can be a bit confusing. It\u2019s not exactly wheat, but an all-in-one plant and grain, which \u00a0comes in multiple forms. Whole farro\u2014which contains plenty\u00a0of fiber, magnesium, Vitamin B3, and zinc\u2014but will need to be soaked overnight. If you\u2019re in the mood for something quick and easy (and I often am), many grocery stores sell the <\/span><i><span style=\"font-weight: 400;\"><a href=\"http:\/\/www.21missionsorganics.com\/italianfarro.html\" target=\"_blank\">semiperlato<\/a> <\/span><\/i><span style=\"font-weight: 400;\">version. Some of the bran is removed, but it doesn\u2019t require any soaking. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Farro is belly-filling without feeling like it weighs down the rest of the body, and it makes for an excellent addition to the diets of those looking for protein without consuming meat.\u00a0<\/span><span style=\"font-weight: 400;\">But wait! There\u2019s more. There are actually three species of farro: Farro piccolo, farro medio, and farro grande, or einkorn, emmer, and spelt. The most common of the three is farro medio, or emmer, which is likely what you\u2019ll find at the grocery store. This version looks a little like brown rice, but lighter in color, and with an earthier chew. \u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">One bite and it\u2019s easy to see why this grain is making a comeback: With hints of cashew and chestnuts, it pairs well with both savory and sweet dishes. One of the most famous ways to enjoy farro is in a <a href=\"http:\/\/www.epicurious.com\/recipes\/food\/views\/tuscan-farro-and-bean-soup-235425\" target=\"_blank\">Tuscan soup<\/a>; the combination of the nutty farro with the fresh veggies creates a meal perfect for crisp fall evenings across a wooden table (candles optional). This recipe calls for peaches, arugula, goat cheese, farro, and a fistful of other goodies that create an earthy and delightful salad. I suggest this with a glass of lemonade or white wine, good friends, and a prayer of gratitude for this crazy good grain.<\/p>\n<h3><b>Farro Salad with Peaches, Arugula, and Mint <\/b><\/h3>\n<p><b><i>For the dressing<\/i><\/b><\/p>\n<ul>\n<li><span style=\"font-weight: 400;\">2 tbsps of olive oil <\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 tbsp lemon juice<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 tbsp lime juice<\/span><\/li>\n<li><span style=\"font-weight: 400;\">2 tsp balsamic vinegar <\/span><\/li>\n<li><span style=\"font-weight: 400;\">2 tsp of honey<\/span><\/li>\n<li><span style=\"font-weight: 400;\">Salt and pepper<\/span><\/li>\n<\/ul>\n<p><b><i>For the salad<\/i><\/b><\/p>\n<ul>\n<li><span style=\"font-weight: 400;\">\u00bd c. uncooked farro (or 1 cup cooked)<\/span><\/li>\n<li><span style=\"font-weight: 400;\">3 c. arugula<\/span><\/li>\n<li><span style=\"font-weight: 400;\">\u00bd c. chopped mint<\/span><\/li>\n<li><span style=\"font-weight: 400;\">\u00bd c. sliced almonds<\/span><\/li>\n<li><span style=\"font-weight: 400;\">\u00bc red onion, thinly sliced<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 \u00bc c. sliced peaches <\/span><\/li>\n<li><span style=\"font-weight: 400;\">4 oz. organic goat cheese<\/span><\/li>\n<\/ul>\n<p><span style=\"font-weight: 400;\">Cook the farro according to the package directions. Trader Joe\u2019s has a <\/span><a href=\"http:\/\/www.traderjoes.com\/fearless-flyer\/article\/928\"><span style=\"font-weight: 400;\">10 minute farro<\/span><\/a><span style=\"font-weight: 400;\">, or you can use the <\/span><a href=\"http:\/\/www.amazon.com\/Roland-Pearled-Italian-Farro-17-6-Ounce\/dp\/B001EO7FTU\"><span style=\"font-weight: 400;\">semiperlato<\/span><\/a><span style=\"font-weight: 400;\"> variety. If you\u2019re using the whole grain variety, remember to soak it, otherwise you will have a mess on your hands. Once the farro is finished cooking (I like it like pasta, or <\/span><i><span style=\"font-weight: 400;\">al dente<\/span><\/i><span style=\"font-weight: 400;\">, but it\u2019s really up to you), drain and rinse under cold water. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Whisk the olive oil, lemon and lime juice, balsamic, and honey together. Add salt and pepper to taste. <\/span><\/p>\n<p>Add the farro to a large bowl, then add the dressing. Stir to coat. Add the arugula, mint, almonds, red onion, and peaches.
