{"id":129883,"date":"2018-07-25T16:06:35","date_gmt":"2018-07-25T20:06:35","guid":{"rendered":"https:\/\/wanderlust.com\/?p=129883"},"modified":"2019-07-25T16:14:31","modified_gmt":"2019-07-25T20:14:31","slug":"a-taste-of-greater-palm-springs-ahi-poke-bowl-from-eight4nine","status":"publish","type":"post","link":"https:\/\/wanderlust.com\/es\/journal\/a-taste-of-greater-palm-springs-ahi-poke-bowl-from-eight4nine\/","title":{"rendered":"A Taste of Greater Palm Springs: Ahi Poke Bowl from Eight4Nine"},"content":{"rendered":"<p>From <a href=\"http:\/\/eight4nine.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Eight4Nine Restaurant<\/a> in Greater Palm Springs.<\/p>\n<h3>Ingredients<\/h3>\n<p>1 lb fresh ahi tuna (find at local grocery store)<br \/>\n1 1\u20442 cup Kimchi (drained)<br \/>\n3 tbs sesame oil<br \/>\n1 tbs shallots (diced)<br \/>\n1 tbs scallions (diced) 1\u20442 tsp Kosher salt<br \/>\n1 avocado (diced)<br \/>\n1 Carrot (julienned)<br \/>\n1 Cucumber (julienned)<br \/>\n1 container Horse radish sprouts (or celery)<br \/>\nBrown rice<br \/>\n1 cup Miso ginger sauce<\/p>\n<p>To assemble:<\/p>\n<ol>\n<li>Dice tuna in small cubes (dice to liking).<\/li>\n<li>In a bowl, mix tuna, kimchi, sesame oil, shallots, scallions, salt, and avocado until tuna is well coated and set aside.<\/li>\n<li>In a plate of your liking, place carrots, cucumber and horseradish sprout and arrange as illustrated.<\/li>\n<li>Do the same with tuna.<\/li>\n<li>Place brown rice at the center of the plate and top with miso ginger sauce.<\/li>\n<\/ol>\n<h3>Kimchi<\/h3>\n<p>1 Napa Cabbage (chopped) 2 scallion stems (chopped)<br \/>\n1\u20442 cup sesame oil<br \/>\n4 cup rice vinegar<br \/>\n1\u20444 cup fresh ginger (minced)<br \/>\n1\u20444 cup Sesame seed<br \/>\n1\u20442 Sambal (add more if you like heat)<\/p>\n<p>To assemble:<\/p>\n<ol>\n<li>Using gloves, combine; cabbage, green onions, sesame seeds and fresh ginger in a large bowl.<\/li>\n<li>Pour together; Rice vinegar, sesame oil, sambal into bowl, making sure that all dry ingredients are covered in liquid.<\/li>\n<li>Mix all ingredients together.<\/li>\n<li>Set at room temp for 24 hours to initiate the fermentation processes and store in refrigerator.<\/li>\n<li>Enjoy Kimchi in, soups, ahi poke, fried rice and so many more dishes!<\/li>\n<li>Miso Ginger Sauce<\/li>\n<\/ol>\n<p>1 tbs Miso paste (find in Local grocery store)<br \/>\n1 cup Mayonnaise<br \/>\n1 tbs fresh ginger (minced)<\/p>\n<p>Combine all ingredients and whisk in a bowl until well incorporated.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Greater Palm Springs is an oasis in the desert.
