{"id":58103,"date":"2015-07-06T14:58:22","date_gmt":"2015-07-06T18:58:22","guid":{"rendered":"http:\/\/wanderlust.com\/?p=58103"},"modified":"2016-07-06T14:58:48","modified_gmt":"2016-07-06T18:58:48","slug":"play-with-your-food-layered-hot-cocoa-with-raspberry-puree","status":"publish","type":"post","link":"https:\/\/wanderlust.com\/de\/journal\/play-with-your-food-layered-hot-cocoa-with-raspberry-puree\/","title":{"rendered":"Play With Your Food: Layered Hot Cocoa With Raspberry Pur\u00e9e"},"content":{"rendered":"<p><em>This recipe is part of a Wanderlust TV series,\u00a0<\/em>Play With Your Food.<\/p>\n<hr \/>\n<p><i>Serves 4<\/i><\/p>\n<p><b>Raspberry pur\u00e9e:<\/b><\/p>\n<p>6 ounces raspberries<br \/>\n\u00bc cup granulated sugar<br \/>\n2 tablespoons freshly squeezed lemon juice<\/p>\n<p><b>Whipped cream:<\/b><\/p>\n<p>1 cup heavy cream<br \/>\n2 tablespoons confectioners\u2019 sugar<br \/>\n1 teaspoon pure vanilla extract<\/p>\n<p><b>Hot cocoa:<\/b><\/p>\n<p>1\u00bd cups whole milk<br \/>\n\u00bd cup heavy cream<br \/>\n6 ounces bittersweet or semisweet chocolate, chopped<br \/>\n2 tablespoons brown sugar<\/p>\n<p>First, make the raspberry pur\u00e9e: In a saucepan, combine the raspberries, sugar, and lemon juice. Bring to a simmer over high heat, stirring to dissolve the sugar. Once all the sugar has dissolved, transfer the mixture to a blender or food processor and blend until smooth. Strain through a fine-mesh sieve and let cool.<\/p>\n<p>Next, to make the whipped cream, simply whisk the heavy cream, confectioners\u2019 sugar, and vanilla extract together until soft peaks form.<\/p>\n<p>Then, make the hot cocoa: In a saucepan, combine the milk, cream, chocolate, and sugar. Bring to a simmer over medium-high heat, stirring until the sugar has dissolved, the chocolate has melted, and the mixture has thickened slightly.<\/p>\n<p>To serve, divide the hot cocoa among tall glasses. Spoon in a thick layer of whipped cream, then drizzle a final layer of raspberry pur\u00e9e.
